Mango is one of the Cambodian most favourite fruit of all time. People eat almost every form of it, starting from the tiny mangoes (the last picture) to the very ripe ones.

Because of its sourness, people always use some other kinds of sauce to dip the mangoes into, so that they can eat the fruits with little sourness and also add tastes to each bite.
Many people like to dip mangoes with many kind of sauce and many kind of dry condiment (usually consists of chili (the red and the green ones), seasoning and sugar). Here are some examples of them:
- Mixture of salt, sugar, seasoning and red chili
- Mixture of salt, sugar, seasoning and green chili
- Mixture of salt, sugar, seasoning and dried shrimp
- Mixture of fish sauce, chili, and sugar (usually palm sugar)
- Mixture of fish sauce, chili, and seasoning
- Shrimp Paste
People also soak mangoes in a solution of salt water, and leave them there for a period of time, the color will change to the one you see in the picture above, and the flavor will be less sour but more tasty.
